スウェーデンから12月のレターが届きました - Message from founder LENA

Before Christmas many people are preparing their special pickled herring. Traditionally it has been pickled with red onion or mustard, but recent days this has been a development where more and more different flavours are ‘invented’ and tested by cooking fans. Recent years also a veggie alternative where the herring has been substituted by aubergine has become quite popular. It taste surprisingly very much like the original herring when pickled.
In the evening of the 24th families are gathered for Christmas dinner with ham as main attraction, salmon, different kind of sausages the pickled herring and plenty more. Now the busy days with preparations before Christmas is over so we can relax and enjoy the company of friends and family without stress.
For me the time before and after Christmas is extra special. This is the time when I start my growing season by setting seeds and take cuttings for an early spring with edibles and lovely flowers.

私は近所を散歩するとき、この光景に毎年とても特別であたたかい気分になります。もしこのライトやキャンドルの明かりが無ければ、真っ暗なただの田舎道なのに、ライトのおかげでとても幻想的な風景を作り出しています。
スウェーデンではクリスマス前になると、各家庭でニシンの酢漬けを準備します。
伝統的なものは、ニシンとレッドオニオンとマスタードで漬け込みますが、最近では色々な料理愛好家が独自のテイストを作り上げたりしていて、実に様々な味が楽しめます。
また、ニシンではなく代わりに野菜を使った酢漬けも出てきていて、なすを使った酢漬けは本当にニシンとそっくりな食感と味が楽しめます。
24日には家族みんなが集まってディナーを楽しみます。
ハムをメインに、スモークサーモンや様々なソーセージ、そしてニシンの酢漬けやたくさんのごちそうで食卓を囲みます。
12月の3週目ぐらいなると、ようやくそういったクリスマスの準備の忙しさから解放されて、リラックスしながらこのクリスマス休暇のシーズンを、友人や家族とゆったり過ごしています。
私にとってはこの時期もまた特別な時期で、やがてやってくる初春に向けて種の仕込みをしたり、苗の準備をしたりして、春が待ち遠しい時期です。
